Applesauce - Pure and Simple
I like to mix Granny Smith apples with some slightly sweet ones like Honeycrisp, Jazz or Envy. Have ready a 4-quart saucepan with lid.

Servings 3 cups
- 8-10 large granny smith apples peeled and cut into small chunks
- 1 1/2 teaspoons cinnamon
- 1-2 tablespoons honey
- 1 tablespoon lemon juice freshly squeezed
- 1 pinch nutmeg optional
- 1/4 teaspoon salt
Peel apples and remove center core. Cut into 1-inch chunks and add to saucepan. This will look like a lot, but will cook down quite a bit.
Add cinnamon, honey, lemon juice, nutmeg (if using) and salt.
Simmer on low for 1 1/2 to 2 hours stirring every 20 minutes or so to prevent sticking to bottom of pan.
Mix with wire whisk to break up apple chunks. I like some chunks of apple in mine so I remove from the heat before completely smooth.
Serve warm or put in refrigerator for later. Enjoy.
