Isa Does It, is a vegan cookbook that has something for everyone. The author, Isa Chandra Moskowitz, is the author of several other highly acclaimed books including Veganomicon, Vegan with a Vengeance and Vegan Brunch.
My son and I tried the Shiitake Banh Mi sandwiches which were very good. The basic Banh Mi sandwich consists of a crusty roll, charred meat (in this case tofu or seitan), a spicy, creamy spread, pickled veggies to cool you down and cilantro or mint. The Almond-Chili spread went perfectly with the mushrooms and pickled veggies. Besides being good, this is a fairly quick dish to put together.
Another favorite is the Curried Peanut Sauce Bowl. It calls for extra-firm tofu which is cut into cubes and browned in a hot pan. I cut the kale into slivers rather than tearing it into pieces. Curry powder and siracha give the gingery peanut sauce it’s spiciness. I served it over cooked brown rice but you could also use quinoa or rice noodles.
The Peachy Raspberry Cobbler was a treat and could easily be made during the week. The use of frozen peaches and raspberries means you can always have the fruit on hand. Serve with vegan ice cream and enjoy!
