Wacky Cake

This is called “Wacky Cake” because it sounds pretty wacky to put oil and vinegar in a cake.  That said it is great for vegetarians as well as vegan’s, as it contains no butter or eggs yet it is incredibly rich and moist.  It is super easy to make and all you need is a bowl, whisk and a pan to bake it in.  The batter will be very thin and once mixed, just pour it into an ungreased pan and bake.  The simplicity of this recipe makes it great to prepare with your kids or grandkids.  You can sprinkle powdered sugar on top or better yet top it with my Mom’s Chocolate Frosting.

Wacky Cake

Preheat oven to 350°F and take out 8-inch by 8-inch pan

Ingredients

Sift together in a medium size bowl:

  • 1 1/2 cups cake flour
  • 1/4 cup unsweetened cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar

Make 3 holes in mixture and add:

  • 1 tablespoon vanilla
  • 1 tablespoon vinegar
  • 1/3 cup Canola oil

Pour over this:

  • 1 cup cold water

Instructions

  • Mix well with a whisk until smooth. Batter will be very thin. Pour into ungreased 8-inch by 8-inch pan and bake in 350 degree oven for 35 to 40 minutes or until cake tester comes out clean. Let cool in pan. Enjoy!
  • For MUFFINS: Pour into paper lined muffin tins, about 3/4 full and bake at 350 degrees for 20 - 25 minutes. Test with cake tester after 20 minutes and cook until tester comes out clean. Cool on rack and enjoy!
