Roasting Bananas

Roasting BananasThe next time you are in the mood for banana bread try roasting the bananas first.  Roasting concentrates the flavor and intensifies the natural sugar content.  Just place ripe bananas, with skin on, on a foil lined sheet pan. Bake in a 400-degree oven for 15-20 minutes or until completely black. Once cooled, cut bananas in half, scoop out the inside and mash.
