It’s never too early to start thinking about your Thanksgiving meal.  Over the years I have made many roll recipes and this year I plan to try something new, Feather-Light Dinner Rolls.  The title describes them perfectly but what I like most is they can be made ahead, frozen and taken out when you need them without losing flavor.  Of course it wouldn’t be Thanksgiving without a turkey. Whatever size turkey you get try using a Reynolds Oven Bag. It produces a moist and perfectly browned turkey and makes cleanup a breeze.  Just follow the instructions on the box.

Another option would be to roast a whole turkey breast.  I tried this last week for the first time and a 5-pound breast roasted in about 2 hours and was moist and delicious. That recipe will be posted in the next few weeks. The Do-Ahead Turkey Gravy takes away the stress of making gravy at the last minute.

Cranberry-Orange & Apple Relish is not too sweet and can be put together in a few minutes.  Green Beans with Buttered Bread Crumbs are super simple yet special in their own way because they are so good.  The one vegetable dish I cannot do without is Carrot-Raspberry Puree.  This recipe came out of a cooking class Martha Stewart gave in 1982 and it is simply delicious.  A potato ricer is a must when making Creamy Mashed Potatoes because it is the easiest way to prepare perfectly smooth mashed potatoes.  All they need is a little milk and butter and they will be the perfect accompaniment to your roast turkey and gravy.  For something different try adding Homemade Applesauce to your menu.  Apples are abundant this time of year and it makes a nice side dish in addition to cranberry sauce.

As far as dessert goes, it’s not a time to worry about calories or sugar.  Steamed Persimmon Pudding is not a pudding at all but a moist, cake like dessert that is cooked in a pudding mold.  Attractive and delicious all it needs is a small dollop of whipped cream.  This New York Cheesecake is lighter than most due to the addition of whipped egg whites.   And last but not least you have to have something pumpkin.  Praline Pumpkin Tart is thinner and lighter than pie but hits the spot if you are craving pumpkin.
